Pain Au Chocolat

Prove for at least an hour in a warm damp area for several hours (Hot water cupboard) until soft, or in the oven at a low temperature (50 degrees) with a tray of boiling water as well. This can be done from frozen.
Once your pastries have risen, cook for approximatley 18 minutes or until golden brown at 180 Degrees on fan force for the perfect fresh pastry.
